Ingredients
½ cup sugar
½ cup soy sauce
¼ cup dark sesame oil
4 large garlic cloves, minced
2 pounds flank steak
Preparation
1. In a large bowl, combine sugar, soy sauce, sesame oil and garlic cloves. Cut steak crosswise at a 45° angle to make strips about 1 inch wide by 5 inches long. Add steak strips and marinate for at least 2 hours in the refrigerator. Meanwhile, cover skewers with water and soak for 30 minutes or more.
2. To skewer, weave a 6- or 8-inch bamboo skewer through each strip of meat. If using the cast iron griddle, place the ridged side up over two gas burners and heat on moderately high heat for several minutes until hot. If using the electric barbecue, heat on moderately high setting until hot.
3. Place beef on griddle or electric barbecue and cook until seared on the outside and just cooked through, about 2 minutes per side. Alternatively, place skewered beef on baking sheet and cook in a preheated MasterChef oven on Convection Bake set at 400 degrees for about 4 minutes or until done.
