
Ingredients
1 ½ pounds boneless, skinless chicken breast halves.
¾ cup mayonnaise
5 teaspoons curry powder
1 tablespoon fresh lime juice
½ teaspoon ground ginger
½ teaspoon salt
¼ teaspoon black pepper
¼ cup red onion chopped
¼ cup chopped fresh cilantro
½ cup chopped celery
1 cup red seedless grapes halved
Preparation
1. Rinse the chicken breasts in cold water and transfer to solid steam tray or other cooking container. Cook in steam oven on CUSTOM OR COOK mode until no longer pink, about 9 minutes. Transfer chicken to a plate and cool 15 minutes. Chop chicken into ½ inch pieces.
2. In a large bowl whisk together mayonnaise, curry powder, lime juice, ginger, salt and pepper.
3. Add the cooled chicken pieces, red onion, cilantro, celery and grapes. Stir gently to combine. Refrigerate to chill.
